Traces of cheese-making activity in Poligny date back to 1264, but the tradition of production has existed for much longer in this agricultural region. It is here that the Arnaud family has been successfully running their independent cheese factory for a century. Thanks to the cooperation of 400 dairy farmers, 200,000 wheels of cheese are currently maturing in about ten kilometers of caves.
EXCEPTIONAL CELLARS
After leaving its military vocation, the Fort des Rousses has dedicated itself to the art of taste. The climate there is constant, and the humidity is perfect. The wonderful stone vaults create a natural "vault effect," conducive to the cellar's ambiance. This vault effect, through a slow mechanism, concentrates the ideal levels of CO2 and ammonia for the aging of the cheese wheels and provides a natural and regular air circulation. These majestic vaults undoubtedly preserve other secrets that give the Comté from Fort des Rousses its exceptional fruity and roasted flavors.
